INGREDIENTS
1 free-range chicken 3 pounds, cut into pieces
½ stick butter
3 shallots, peeled, thinly sliced
2 garlic cloves, peeled, minced
2 stalks of celery, sliced
10 oz carrots, peeled, sliced
1 bouquet garni
1 cup white wine
½ cup chicken stock
8 oz button mushrooms, sliced
8 oz Auvergne blue cheese, cut into pieces
salt
black pepper
1 pound hot cooked white rice
Heat half the butter in a sauté pan, brown the chicken pieces for 5 minutes on all sides. Add the shallots, garlic and celery, stir, cook for 5 minutes. Add the carrots and the bouquet garni, pour in the wine and the broth, season with salt and pepper to taste. Stir, simmer 40 minutes.
In a frying pan, brown the sliced mushrooms with the rest of the butter. To book.
Remove the chicken and carrots from the pan, put them in a deep dish. Add the sliced mushrooms, keep warm.
Take a half a pint of the cooking broth, filter it and then pour it into a saucepan. Bring to a boil, then remove from heat immediately. Incorporate the Bleu d'Auvergne cut into pieces in the saucepan, pass everything in a hand blender to obtain a thick and creamy sauce. Pour the sauce into the dish, stir and serve immediately with white rice.
